And the cooking goes on…
Today, we had shrimp over pasta for first dinner.

The shrimp was baked in a foil packet with butter, lemon, fresh garlic, and parsley. For the pasta, I had to use spaghetti since we didn’t have any linguine. Tossed it in a little olive oil after draining, and added some diced red pepper for color.
That’s mango salsa over there on the right (fresh mango with tomato, red pepper, and lime, olive oil and a little vinegar, fresh cilantro to finish.)
The shrimp was cooked last night (had to peel, devein and bake last night since I’d bought it fresh yesterday), then refrigerated in its foil packet and reheated in the oven today. I was surprised that it held its texture well and didn’t end up overdone in spite of today’s reheat. (yes, it was thoroughly cooked yesterday!)
Hey Rob — Although there’s some color, the appearance is fairly bland (all white, yellow & red.) What could I have sprinkled on to liven up the presentation? A couple of lime slices for garnish? Another sprinkle of parsley?
(For those of you who noticed that the shrimp was our first dinner…Our second dinner was pizza. Yes. We went from fresh seafood to pizza from a cardboard box. We have pizza and a movie or BritWit on Saturday nights here. Couldn’t break with tradition….so we had the shrimp dinner about 3 or 4, then second dinner around 7.)

Looks good, to be honest. Perhaps a sprig of basil leaf on the side if you’re looking for extra color.

BTW, the shrimp was excellent — nicely seasoned, but no so that you couldn’t taste the shrimp, which is what you’re there for! I’m not too sure about the salsa, though. Maybe it just wasn’t what I was expecting. Or, maybe I didn’t like the mix of mango and tomato.
